Planning for dinners- including Fruit of the Week!

Recently, Carter and I have adopted a new tradition: Fruit of the Week. Every week we choose a new fruit that we will both enjoy. The first week we did was pineapple, and we quickly found out you need more than one fruit to get a week’s worth of servings! This week our fruit of the week is strawberries. There was a good sale on them at our semi-local Walmart (the one that’s only 45 minutes away, that is).
Sunday- Chicken Orzo

Monday- Turkey Teriyaki Stir Fry
Carter is not a big fan of ground turkey but is a big fan of teriyaki. I’m hoping to convince him to eat healthy with me with this recipe!
Tuesday- Chicken Enchiladas
When I asked Carter if he wanted anything in particular for dinner this week, enchiladas were the only thing he said. While not the healthiest thing we could eat, I will try my best!
Wednesday- Unstuffed Peppers
We’ve been wanting to incorporate more veggies into our diets. While I’m not the biggest fan of the texture of cooked peppers, I’m hoping to mask it a little bit with this skillet recipe!
Thursday- Chicken Burrito Bowls
Yes, two Mexican-inspired meals in a week. I’ve found that southwest meals are easier to make healthy than other recipes. You can easily make it bean- and veggie-heavy, saving on costs and calories.
Friday- Ground Beef Philly Skillet
I’ve had a Philly exactly one time in my life, but I loved it. Going to break out the big cast iron for this one!
Saturday- Kielbasa and Tortellini
I absolutely adore kielbasa and could honestly eat it every day. My usual go-to kielbasa recipe isn’t really the healthiest, so I’m going to try this sheet pan recipe instead!
And that’s the plan for the week! I’ve found that having a plan helps me save money, time, and mental load in the long run. Hopefully this will help you too!
