This week we had an overabundance of meals, so on Thursday we ended up doing leftovers instead of cooking!
Monday- Crockpot Teriyaki Chicken
I love a good crockpot recipe. I use them when I’m going to be home later than usual so that I don’t have to worry about cooking when I get home. I whipped this up before I left for my meetings and just made some rice (20 minutes) and sauteed green beans in garlic butter when I got home! Tuesday- Beef Stew
I was home all afternoon that day, so it made sense to make my favorite stew. My mom always made this growing up, so I’m not sure of where the original recipe came from, but there are tons of good stew recipes out there! I whipped up a box of Red Lobster biscuits to go with it.
Wednesday- Cajun Chicken Pasta

Thursday- Leftover Night
Since we had been to Carter’s parents’ house the weekend before we had a surplus of leftovers. Our fridge was packed, so Carter made the executive decision to give me the day off of cooking so we could eat some of the leftovers down. We also ended up carving pumpkins too, so it made cleaning up so much easier!
Friday- On Our Own Night
I realized too late that I had forgotten to get the ground beef I needed for dinner, so Carter and I decided to have an On Our Own night. I ended up soft-boiling the last two eggs in the fridge for some chicken ramen, and Carter used some almost-bad cheese to make two grilled cheese sandwiches. He was very proud of himself!
