We are in our first full week of October! It’s still somewhat warm here in southeastern ND, supposed to be in the mid-70s all week! While I would love to put out some fall comfort food, I don’t think the 75-degree weather really does it justice. I’m also off the hook this week for cooking since we have a wedding to go to! Here’s what we’re having this week:

Monday: Garlic chicken and rice with frozen mixed veggies

This was the first meal I ever made for Carter, and I think it was the point that solidified that he wanted to marry me! We always make it way spicier than our original recipe calls for.

Tuesday: Cheeseburger Stuffed Shells with bagged salad

In trying to lose some weight for the wedding I had briefly signed up for Weight Watchers. This is about the only recipe that I still use from those months, mostly because it’s so delicious! Even Carter enjoys it and even asks for it by name. I pair it with a bagged salad since fresh veggies often go bad before we can enjoy them.

Wednesday: Chicken with Jalapeno Sauce and Spanish Rice

I recently obtained some fresh jalapenos from a coworker, so figured this would be the perfect way to use them up!

As usual, I only plan dinners for the week. We eat leftovers for lunch, and usually either have yogurt or toast for breakfast. Only doing dinners helps keep our grocery bills lower and helps keep our food waste down!
